Sweet n’ Sour Pork

Ingredients:
Cut pork into ½ -3/4 “ cubes (1-1/2 #)
Mix with 1 T soy sauce
¼ t pepper
¼ t 5-spice powder ( optional)
Refrigerate while making batter
Batter
1 c flour
3 c warm water
1 T peanut oil
Mix and let stand 30 minutes
Beat 1 egg white until stiff and fold into mixture.
Coat pork in batter and fry in hot oil. Drain on paper towels and set aside in oven to stay warm
Sauce
1 can pineapple chunks, drained
2 T soy sauce
1/8 c. vinegar
1/8 cup catsup
1/8 c sweet pickle juice
brown sugar to taste
2 T cornstarch dissolved in ¼ c cold water

Directions:
Mix juice with all other ingredients. Cook in large skillet until bubbly. (Taste and adjust sugar, vinegar, or say sauce to taste) Add ½ med onion cut into thin wedges, ½ red bell pepper cut into strips, 1 carrot shaved thin, 2 stalks celery cut on the diagonal. Simmer just until veggies are hot. Add pork and serve immediately over rice.
